Red fish is considered a delicacy. Few people can afford to eat it every day. Mostly salmon, trout and other elite varieties are served on the table on festive occasions. These varieties have excellent taste qualities and are very healthy. From such meat cooks prepare delicious restaurant dishes.
Types of red fish
There are three main categories of red fish:
- sturgeons;
- salmonids;
- The white or pink variety of salmon.
The sturgeon group includes fish species that live in seas and fresh water bodies. The most popular in this category are:
- sturgeon;
- beluga;
- sterlet.
The sterlet weighs 5-10 kg, but it is possible to find larger specimens. The sturgeon can grow up to 100 kg.
The beluga is the largest fish that lives in freshwater reservoirs. It can weigh up to one ton.
The salmon group includes fish that live in the White Sea, the Baltic Sea, and the Pacific Ocean. This category includes:
- salmon;
- trout;
- chum salmon;
- pink salmon;
- Nerka.
Trout are mottled in color and live in cool and clear waters. It lives in bodies of water that do not freeze in winter. Trout activity peaks in the fall and winter - it is a predator fish.
The salmon inhabits not only the Atlantic ocean waters, but also lakes. Its maximum weight is 40 kg and its length is 1.5 m.
The chum salmon habitat is the Pacific Ocean, and during the spawning season it changes its coloration.
Pink salmon is one of the most common species of salmon. It differs from other representatives by its small size. It weighs up to 3 kg.
The color of the meat of these fish species is red or almost orange. This is also the color of the fish during spawning.
Salmon fish with white meat include taimen, coho, and whitefish.
Specialists believe that salmonids in general are incorrectly categorized as red fish. In ancient times, people called fish red not only because of the specific color of its meat, but also because it looked beautiful. Fish cuts of red, pink or orange hue can easily decorate any table.
The main differences between sturgeon and salmon
The torso of the salmon family is laterally compressed and elongated. Their back coloration is usually grayish-blue. There are dark spots on the sides and the belly is silvery. Interestingly, the color can change depending on the habitat and age of the fish.
Sturgeon breeds produce black caviar, while salmon breeds produce red caviar. Some varieties of red fish are bred in captivity. These species (e.g. trout) are more affordable. Some species of red fish are found only in the vicinity of Kamchatka and for this reason are too expensive. Fishery of some species of red fish is limited. The price is high not only because of the value of the fish, but also because of shipping and storage costs.
In markets and supermarkets you can buy red fish of different species. Members of the sturgeon family are more expensive than salmon.
