The classic version of marinating large amounts of meat looks like this: first you have to cut the meat, then make the marinade, and then keep the steaks in spices for several days. This is a huge waste of human resources and time, during which the meat will lose its freshness, and can lead to great losses for the business.
The principle of operation of the vacuum massager for meat
The work with the machine consists of several cycles:
- First, the raw material must undergo special processing. In the shop, the staff cuts the meat. It must be fresh and cooled.
- At the same time, a marinade is prepared. Marinade is made in a ratio of 1 to 10, for example, for 500 kg of meat takes 50 kg of marinade.
- Then the meat and marinade are put into the massager. It is necessary to choose a special program, which will regulate the speed of processing, its duration and the desired effect.
- A special tube (extractor) is connected, which regulates the pressure. It also evacuates the air.
- Approximate time of meat processing is 1 hour (depending on the program).
- Further, the meat is placed in a vacuum pack and prepared for sale or cooking.
- After use the vacuum massager is cleaned and dried.
A complete cycle of meat processing is about 3 hours, saving a lot of time. Despite the fact that this equipment is quite expensive, it allows you to make the product of higher quality than with manual processing.
